Red Quinoa and Black Bean Salad

1 cup regular or red dry quinoa
2 cups water
1 can (15oz) black beans, rinsed and drained
2/3 cups salsa (I use Newmans)
2 green onions(white and green), chopped
3 tablespoons cilantro, chopped
1 TBL lime juice

Add quinoa to 2 cups water and bring to a boil  reduce heat, cover and simmer until all water is absorbed (about 12 minutes)

Placed cooked quinoa in a medium size bowl. Add salsa and black beans and gently mix until combined.  Mix in cilantro, lime juice and green onions.

264 calories, 2 grams fat, 12 g protein, 48 g carbs, 8 grams fiber, 192 g sodium
