Spicy White Bean and Pork Tenderloin Chili

 

Ingredients

2 T mild olive oil

1 onion, cut into small dice

1/4 tsp salt

1 lb pork tenderloin, cut into bite size pieces

8oz beer

3 cans Goya Small White Beans, rinsed and drained

1 cup strained pureed tomatoes

1 tsp adobo (sauce) from a can of chipotle en adobo

1 chipotle pepper from the can, finely chopped (1 generous tsp)

Fresh cilantro

Directions:

Heat the oil in a medium pot over medium high heat. Add onion and salt and reduce to medium; cook for 3-4 minutes until onion has softened.

Increase the heat to high and add pork. Cook, stirring as needed until pork has lost its raw look. Add the beer, cover the pot and reduce the heat to medium so the beer barely bubbles.

Cook, stirring once or twice for 8 minutes, then add beans, tomato puree, adobo, chipotle chili pepper, stir to mix well. Partially cover, leaving the lid ajar, so steam can escape and cook for 30 minutes, stirring occasionally and adjusting the heat as needed so the liquid barely boils.

Taste and adjust seasoning. Divide among bowls and sprinkle with cilantro.

Serves 6.

I made this for dinner last night and it was sooooo good!
It is totally different than anything I usually make; a very nice change I highly recommend.
I accidentally put in 1 tbps of adobo sauce and thought it was going to be way too hot, but it was actually perfect.
